These fine wine grapes are harvested from the red Top Vineyard near Chowchilla. Fermented in a similar style as Cabernet Sauvignon, then barre aged for six months in French Oak. |

CABERNET SAUVIGNON
Inoculated with a special yeast culture, fermented in rotary fermentors, pressed after two weeks, finished in stainless steel and then put into French and American oak barrels to age. Bottled the following year. |

SANGIOVESE
From the Lodi region, these grapes are treated similarly to the Merlot grapes using French oak barrels. This variety of grape is the same that makes Italian Chianti. Our U.S. soils, however, give it it's own unique flavor. |

SYRAH
Harvested for the first time in 2001, this is Oak Hollow's newest varietal. Currently aging in a mix of French and American oak, this will develop a deep rich color. Australia's influence has helped Syrah gain popularity within the United States, and Oak Hollow is eagerly anticipating the finish of this wine. |
