MERLOT
These fine wine grapes are harvested from the red Top Vineyard near Chowchilla. Fermented in a similar style as Cabernet Sauvignon, then barre aged for six months in French Oak.

CABERNET SAUVIGNON
Inoculated with a special yeast culture, fermented in rotary fermentors, pressed after two weeks, finished in stainless steel and then put into French and American oak barrels to age. Bottled the following year.

SANGIOVESE
From the Lodi region, these grapes are treated similarly to the Merlot grapes using French oak barrels. This variety of grape is the same that makes Italian Chianti. Our U.S. soils, however, give it it's own unique flavor.

ZINFANDEL
Harvested in the distinctive Lodi region, fermented in stainless steel and aged in a mix of American and French oak barrels to produce a ripe berry-like flavor.

MATCHINGS  Delicious with lamb, barbecued kabobs, grilled meats and vegetables and red sauces

PETITE SIRAH
Harvested in Lodi, the long growing season allows our Petit Syrah to fully mature. Barrel aged in French oak.
BOUQUET Ripe blackberry and black plum
TASTE  Ripe blackberry and black plum with a long finish
MATCHING  Grilled meats, lamb and pasta (also, crusty breads, rich cheeses, grapes and cured meat)

SYRAH
Harvested for the first time in 2001, this is Oak Hollow's newest varietal. Currently aging in a mix of French and American oak, this will develop a deep rich color. Australia's influence has helped Syrah gain popularity within the United States, and Oak Hollow is eagerly anticipating the finish of this wine.

CHARDONNAY
Grapes were harvested in both Lodi and Contra Costa regions, fermented in stainless steel then aged for four and half months in French oak barrels.

MATCHINGS  Enjoy with fish, shellfish, cheese, crackers and fruit
SERVING TEMPERATURE  Chilled

VIOGNIER
Originating in Lodi, these grapes were barrel fermented in older oak giving it a very floral aromatic nose. This exotic wine is dry. Great alternative to Chardonnay.

MATCHINGS  Enjoy with ethnic foods, such as Spanish, Mexican and Asian
SERVING TEMPERATURE  Chilled

SAUVIGNON BLANC
Harvested from Fresno State University, these grapes were handpicked and fermented in stainless steel. Typically consumed young in order to capture all of its wonderful nuances. In France, it's a more grassy flavored wined.

TASTE   Citrus and melon
MATCHINGS   Savor with seafood and slightly salty shellfish dishes

MUSCAT CANELLI
Made exclusively from Muscat Canelli grapes from the Madera region of California, picked at 27% sugar then cold fermented for three months, this delicious wine retains all of its fruity nuances. Residual sugars provide the typical sweetness expected of an aperitif.

TASTE   Pear, apricot, peach and hint of kiwi
MATCHINGS   Enjoy with cheeses, crackers, fruits and sweet desserts

WHITE ZINFANDEL
This varietal was fermented in stainless steel to retain all of its fruity character. A lovely pink wine, luscious, sweet and well balanced.

TASTE   Very mellow, round flavor in the mouth with slightly spicy overtone
MATCHINGS   Enjoy as an aperitif or coupled with fruit for a refreshing sangria. Yummy with hot and spicy fare: Asian, Mexican, Spanish and Indian
